How to stop a seasoning powder caking with a silica flow aid

In short: Blend a small dose of flow-aid silica into the finished seasoning as the last step, then test caking the way the product fails in real life: warm, humid storage under the weight of a stacked pallet. Compare the treated and untreated blend by tipping the jar, not by feel. What you need

  • Your finished seasoning or beverage powder, from the production line
  • Flow-aid sample set (precipitated and porous routes)
  • Tumble or ribbon blender, sample jars or pouches, a small weight to simulate stacking
  • Humid cabinet or a sealed box with a wet sponge, and a warm cupboard

Step by step

  1. Blend the silica last

    Add the flow aid to the finished blend and mix only long enough to distribute it. Over-mixing can break agglomerates in the seasoning and change how it flows for reasons unrelated to the silica.

  2. Fill the real packaging

    Put the treated and untreated blends in the pouch or jar the product ships in. Caking depends on headspace, moisture barrier and pressure, so a laboratory beaker gives a false pass.

  3. Store under load, warm and humid

    Stack the pouches under a weight and hold them warm in a humid cabinet for a week or more. This is the condition a pallet sees in a container and a warehouse in the tropics.

  4. Tip, do not touch

    Open each pack and tip it onto a tray. A powder that pours has passed; one that comes out as a slab or needs shaking has caked. Photograph the tray — it is the clearest record for the customer.

  5. Check the hopper behaviour

    Run the treated blend through the filler or a small hopper and watch for bridging and rat-holing. Flow in the pack and flow in the hopper are different properties and both matter.

  6. Confirm the dose is the lowest that works

    Repeat at a lower dose once you have a pass. Flow aids are inert but they are also cost and label space, and the lowest effective dose is the one that survives the buyer's review.

Mistakes that spoil the comparison

  • Testing caking at room temperature in a dry laboratory.
  • Blending the silica in early with the salt and sugar.
  • Assuming a porous grade and a precipitated grade behave the same on an oily seasoning.

Questions we get asked

Does a flow aid change the taste?

Silica is tasteless and odourless at flow-aid doses. If a panel notices a difference, look first at changed dissolution speed or dust, not flavour.

Precipitated or porous — which route first?

Precipitated (CENSIL 260P) for dry blends that cake under pressure; porous (CENSIL 310 or 320) when the blend carries oil or a hygroscopic ingredient that needs to be taken up rather than coated.
